Dinner Slump...

Calling all domestic ladies!?! I'm in a dinner slump!! Please pass along your favorite dinner ideas to us or my husband might leave me for Betty Crocker!! :)

Keep in mind that Todd is a carnivor!! Our dinner always must include some sort of meat.

Thank you in advance for your generosity and help in saving the future of my family...if I try serving tacos again, he really might go insane... :)



(P.S. I googled "Betty Crocker" thinking I might find a nice picture of a housewife serving some dinner...instead I found a very inappropriate picture of a woman wearing some sexy lingerie and an apron. Todd doesn't understand why I don't post this picture. You're so rude, Todd.)

We had a VERY easy version of beef stroganoff tonight. All you need is ground beef, 1 can cream of mushroom sauce and about 3 or 4 dollops of sour cream and wa la! You're done.

Tonight I was feeling domestic so I added sauteed mushrooms, onion and garlic and instead of ground beef I used some thin sliced steak I got for FREE from the grocery game. I also added some milk to thin it out a bit :) Easy and YUMMY.

How about tater-tot casserole? SOOO easy…and really yummy.

Ground 2lbs of ground beef and place in a 9” x 13” oven safe pan
Add 3 cans of cream of chicken soup**
Place rows of tots on the top
Put in oven per directions for cooking tots (you want them golden brown on top)

**I’ve even had it where someone pre-cooked some tots then mashed them up and mixed them with the beef and soup. Reduce the amount of beef for this option.

I’m also a fan of pork tenderloin. Does Todd eat pork? This is super easy, too.

Pick up pork tenderloin from your favorite grocer. It comes in a plastic wrapper (long and skinny) in the meat section.
I place it on a baking sheet lined with foil. Drizzle the sheet with light olive oil.
Place the tenderloin on the sheet, then drizzle the meat with a thin layer of olive oil.
I sprinkle a little rosemary, garlic power and sea salt (rotate meat and repeat). No measurements; just go with your gut. The only ingredient to watch is the garlic powder but this recipe is really hard to screw up.
Place it in the oven at 350 for roughly 25-30 minutes, depending on how tender you want it (just make sure the center reaches a temp of 170).

I like to serve this with rice pilaf and a salad. YUM!

Every Monday she lists a menu for the week and others list their menus too. I did a big pot of vegetable soup like G-ma used to make. Stew meat that I simmer most of the day with Johnny's seasoning and then you add carrots, potatoes, (you can add onions if you must). I used to make a list of all the things my family liked to eat for dinner so I could use it for inspiration when I just could care less about dinner. Press on!

Hey Jessica, It's been ages since I've seen you, but we went to Christ's Church together years ago. I blog-hop your way periodically. Here's some ideas I like.

BBQ Beef Sandwiches
1 can beef (I buy it in bulk from Costco...it's like a jumbo can of tuna, but it's really lean beef).
Your fave BBQ sauce
Hamburger buns (or hot dog buns or bread)
Open the can of beef and pour into saucepan (juice and all). Stir with a fork to shred the beef.
Pour in BBQ sauce to taste (about 1/2 cup) and stir. Heat over medium until hot throughout.
Pour onto warm bread/buns.

It tastes like those tubs of Lloyd's BBQ beef from the freezer section, but is much cheaper.

Do you have a George Foreman Grill?
You should...they're awesome!!
Put chicken breasts (even frozen) on the heated grill. Shake on Johnny's Seasoning, Garlic Salt and Lemon Pepper. Cook until done, turning once. (The light goes off when it's done).

We LOVE Breakfast for Dinner (Brinner?) Waffles topped with fruit is a favorite (warm up a can of canned peaches in a saucepan. Add a little cinnamon and it makes a great topping.) Also, Costco sells bags of frozen mixed berries which are great as a waffle or pancake topping. Just warm them up in the microwave.

I agree with Shawna on the pork. They also sell some varieties pre-seasoned. We love the Apple-Brandy and Teriyaki versions

Hey Jess. I get a free menu sent to me every week (on Mondays) and I use about 3 or 4 of their 5 planned meals for my weekly meal planning. They also have a ton of other great resources on their website for frugal shopping, secrets of a busy cook, etc. The only thing is....they are BIG on leftovers and I know Todd isn't a fan of those. They teach you how to do bulk cooking; to store stuff in the freezer for each meal so you're not cooking the meat every night and such. I don't actually do that though. I haven't tried it but it seems like I would spend more time doing the bulk cooking than to just do it each night. :) this is long, so "the end".

Jessica, this blog, www.thepioneerwoman.com is amazing. She has a cooking section that is fool proof and fun, and she even has a section for "cowboy food". That should take Betty Crocker's appeal away and put it on the Lovely JEssica! I (and KC) have enjoyed everything I've made from this site.
